3 Healthy Recipes from Spa Cuisine

Chocolate Coconut Cream 

Rancho La Puearta’s eggless recipe invites you to a sweet journey in Mexico, one of cacao’s origin countries. This journey starts with the sourishness of chocolate and continues with the tropical touches of appealing coconut. 


Ingredients (6 – 10 people) 

  • 1,1/2 glass coconut milk 
  • 3 tablespoons of brown sugar  
  • 340 g dark chocolate thinly sliced  
  • A pinch of salt 
  • ½ cup roasted coconut flakes 
  • Fresh fruit and mint leaves to decorate 

Preparation

First add the coconut milk and sugar into a bowl over medium heat. Keep on stirring for around 2 minutes until the sugar dissolves and the mixture thickens. Put the heat on low, add the sliced chocolate and the pinch of salt and stir again until the chocolate melts. Pour the mixture into cups and place them in the refrigerator for at least 20 minutes, or until it reaches the consistency of a pudding. In the meantime, in a small pan toast coconut flake over medium heat. Wait until they cool down and one you take out the puddings sprinkle over them. You can do some finishing touches with fresh fruit and mint leaves. 

Immunity Cocktail 

This delicious cocktail Chiva Som, is prepared using a series of healthy ingredients. While apples and beets rich in vitamin C help stop common colds, the beet also helps lower blood pressure and plays an antioxidant role in improving general cardiovascular health. And ginger that provides important benefits to the digestive system helps eliminate inflammation and improves antioxidant enzyme functions. 


Ingredients 

  • 1,5 large carrots
  • 1/2 beet
  • A pinch of ginger 
  • 1 medium size red apple

Preparation 

Juice the ingredients, pour into a glass and serve. If you would like to consume it cold, you can pre-cool the glass or you can add big ice cubes to prevent them from watering down the juice.

Raw Curly Cabbage Salad 

This light and energizing salad recipe from Kamalaya Koh Samui, supports the natural detox process of the body. It contributes to liver health by containing raw and healthy components rich in calcium, fiber and iron, as well as vitamins A, K and C. 


Ingredients

  • 100 g curly cabbage cut into small pieces 
  • 50 g broccoli
  • 50 g sliced seeds removed cucumber
  • 10 g pineapple cut into small pieces 

For the sauce:

  • 1/4 teaspoon sea salt 
  • 1/2 teaspoon lemon juice 
  • 1/4 teaspoon lemon zest 
  • 20 g sunflower seeds
  • 1 teaspoon olive oil 
  • 1/4 teaspoon black pepper 

For the topping: 

  • 4 pieces of julienne sliced red capia pepper 
  • 3 pinches of edible flowers 

Preparation

Put all the ingredients in a bowl and mix slowly. After letting it rest for around 3 – 5 minutes you can create a magnificent appearance by adding capia pepper and edible flowers on top to decorate.
